BROCCOLI
Broccoli is an annual or biennial plant grown for its edible flower heads which are used as a vegetable. Believed to be first discovered in the Mediterranean region, Italy respectively, the broccoli has a thick green stalk, or stem, which gives rise to thick, leathery, oblong leaves which are gray-blue to green in color. The name “broccoli” comes from the Italian plural of broccolo, which means "the flowering crest of a cabbage", referring to the plant’s leaves.
Every part of Broccoli is edible when cooked properly, even the stem. Broccoli’s flavor can be described as mild and earthy with a crunchy texture. Like the bright green color of its leaves, the plant also tastes a bit grassy and slightly bitter due to the amount of bitter compound the plant contains.
Broccoli is a versatile vegetable, appeared in many cuisines worldwide. The vegetable must be cooked before consumed, often used in salads, soups, and side dishes with meat and chicken. Broccoli dishes are cooked in everyday meals as well as at parties
One of the biggest benefits of broccoli is its high content of essential nutrients. The amount of vitamins, minerals, fiber, and some biological compounds found in broccoli is very good for health. Broccoli is rich in vitamin C, vitamin A, vitamin K, vitamin B9 (Folate), and some minerals like Potassium, Phosphorus, and Selenium.
Some studies show that broccoli may improve cardiovascular function. High cholesterol and triglyceride levels are risk factors for the onset of cardiovascular disease. The use of broccoli in meals has not only been shown to significantly reduce triglyceride and LDL cholesterol levels, but also increase levels of beneficial HDL cholesterol. This eliminates the risk of cardiovascular disease as well as atherosclerosis.
Some of the antioxidants in broccoli have been studied to help reduce the risk of heart attack. Studies in mice that were put into artificial cardiac arrest and then fed broccoli reduced damage and oxidative stress in heart tissue.
